Healthy Recipes: Gluten Free Vegan Blueberry Oats

We have previously written about the ease and benefits of making overnight oats.

When you need to get out of the house quickly in the morning, during stressful mornings getting the kids out the door, when you really need to have a healthy and filling breakfast but just don’t have the time to prepare something complicated, making a breakfast that basically cooks itself overnight is a real lifesaver.  This recipe is completely gluten-free and vegan.  Chia seeds provide protein, blueberries are a great antioxidant, and coconut and almonds are wonderful sources of much needed healthy fats.  Delicious and healthy, we highly recommend this fantastic breakfast!

Ingredients:

1 cup gluten-free rolled oats

½ cup coconut milk

½ cup almond milk

1 tablespoon honey

1 tablespoon chia seeds

1 small pinch sea salt

1 large handful fresh blueberries

3 teaspoons slivered almonds

3 teaspoons grated coconut

Ingredients:

In a large bowl mix together oats, milks, chia seeds, honey and salt

Gently fold in fresh blueberries

Spoon mixture into glass jars, cover and leave in refrigerator for at least four hours

When ready garnish each jar with slivered almonds and grated coconut

If desired a small amount of honey or cinnamon may also be added
